I left the crunchy noodles out once, don’t make the same mistake!

It is so easy to make this recipe. Chicken, slaw, dressing + crunchy noodles. So yummy!

The most technical thing is poaching the chicken breast which is literally popping the chicken in boiled water and letting it sit for 20 – 45 minutes.

You can also use roast chicken or left overs from this Easy Peasy Lemon Chicken recipe. I like the simplicity of the poached chicken.

When it comes the noodles, I haven’t found anyone better than Chang’s Original Fried Noodles. This is a lazy summer salad, I find the packet slaw works just fine.

You can buy fresh ingredients like carrot, cabbage and chop everything yourself. Or change it up with different ingredients like cucumber, mushrooms, edamame beans – really any salad ingredients will work.

I like to add tomato as it gives the salad a burst of freshness, but it can be omitted if you feel it might make the noodles soggy – the noodles are King.

Equipment you need for this Chicken Salad with an Asian Twist:

  • Chopping board
  • Sharp knife;
  • Jar with a lid ( I use old peanut butter jars)
  • Measuring spoons; and
  • A good size salad bowl and servers.

Ingredients

Salad

  • 200 g chicken breast poached, cooled and shredded
  • 1 pre-packet dry coleslaw from IGA, Coles or Woolies
  • 1 spring onion sliced
  • 200 g cherry tomatoes cut in half, optional
  • 1 bunch coriander leaves chopped
  • 1 red chilli chopped, or chilli flakes (optional)
  • 1 packet Chang's Original Fried Noodles from IGA, Coles or Woolies

Dressing

  • 2 tbsp soy sauce
  • 3 tbsp cider vinegar or rice wine vinegar, if you have it
  • 1 tbsp sesame oil not optional
  • 2 tbsp vegetable oil
  • 1 tsp castor sugar
  • 1 tsp ginger minced, jar is fine
  • 1 tsp garlic minced, jar is fine
  • salt & pepper

Instructions

Dressing

  • Add all of the dressing ingredients into a jar (with a tight lid) and give it a good shake, and set aside

Salad

  • Add the salad ingredients to a bowl (except for the noodles), drizzle over the dressing and toss together
  • Just before serving, add half the noodles and toss through the salad, then add the rest to the top. (so the noodles keep their crunch).
