This is the creamy salad dressing need when you are avoiding mayonnaise and oil.

Equipment

  • Blender
  • Jar with lid for storage

Ingredients

  • 1 cup Greek yoghurt
  • 1 cup a mixutre of lightly packed coriander, Italian parsley, dill, mint and/or basil any leafy fresh herbs. Avoid hard leaves like rosemary.
  • ¼ cup spring onions or chives
  • 2 tbsp tarragon leaves optional
  • 1 clove garlic roughly chopped
  • ½ tsp salt
  • ground black pepper to taste

Instructions

  • Combine all ingredients in a blender and process
  • Taste and add more salt and pepper if needed

Notes

The dressing will keep in an airtight container for 5 to 7 days.
Make it Spicy Add chilli flakes or jalapenos!
